Pancakes for breakfast :
Lot's of sewing up squares (and yes, I need a manicure) :

Rearranged a small corner in the kitchen and brought this set out of storage:
Here is the pancake recipe I use:
Nigella's American Pancakes (from the Domestic Goddess book)
225g plain flour
1 tablespoon baking powder
pinch of salt
1 teaspoon sugar
2 large eggs, beaten
30g butter, melted and cooled
300ml milk
butter for frying

Whisk all ingredients together until blended. You can leave for 20 minutes, but I am generally too impatient to do this. Pour a ladleful at a time into the frypan and cook until bubbling on the top. Flip over and cook for another minute or so.
I like to keep mine warm in a very low oven that I switch off after 5 minutes or so. I usually double the recipe for our hungry family of four... number 5 is still on a milk diet :)

How do you get your pancakes to look like that?! What sort of pan do you use??? Mine always look AWFUL! (Taste good though... luckily!)

Vic, I use a heavy based non-stick pan (Circulon brand) that works quit well with pancakes. Though, when the budget allows I'd like to phase out my non stick pans as I've heard they can be toxic :(
